The Hida Takayama Chinese noodles have a long history and are well-known in the Chubu region, and have been reproduced here in cooperation with the Hida Takayama Chinese Soba Noodle Tradition Association. Soy sauce soup based on chicken and pork stock, with dried sardines and dried bonito added.
